Imagine if we had a food system that actually produced wholesome food. Imagine if it produced that food in a way that restored the land. Imagine if we could eat every meal knowing these few simple things: What it is we're eating. Where it came from. How it found its way to our table. And what it really cost. If that was the reality, then every meal would have the potential to be a perfect meal.

Originally, the atoms of carbon from which we're made were floating in the air, part of a carbon dioxide molecule. The only way to recruit these carbon atoms for the molecules necessary to support life-the carbohydrates, amino acids, proteins, and lipids-is by means of photosynthesis. I don't think it's a journalist's job to issue shopping lists or policy descriptions. We're supposed to show people how the world is, to give them the tools they need to make good decisions as citizens or consumers. I really do think that cooking is very important. It's really important for the farmers because it means you're going to be buying real food and not processed food, so that means the farmers will capture more of your food dollar.
